This spring, rise to the occasion & brew a coffee of nostalgic 32bit biblical proportions. Posa De Christo is made up of 2 different Paraneima lots, one washed & one natural from two producers; Nery & Edin. This coffee is full of that wild Paraneima flavour profile: The washed coffees often taste bright, tropical, & have this REALLY interesting tea-like note finish almost like sage/thyme that we find so amazing while the naturals are heavy dark ripe fruits, cacao nibs, & massive body. When these two coffees are blended together, it creates the the best of both worlds...this one & the next ; )

PARANEIMA
Parainema is a coffee varietal developed in Honduras by IHCAFE as part of a national effort to combat coffee leaf rust while improving cup quality.
It was officially released in the early 2000s (around 2002–2004) after years of field trials and selection.
Genetically, it comes from Timor Hybrid lineage (for rust resistance) crossed with traditional Arabica types—meaning it was built for resilience first, but with flavour in mind.
Where it grows
Primarily in Honduras, especially:
- Santa Bárbara
- El Paraíso
Best expression tends to show at:
- 1200–1700 MASL
- Cooler, slower-growing conditions → more complex sugars
