Sebastien Ramirez is no stranger to us & not a new addition to our menu. This coffee in particular though, is ver much a new addition. Called "Midnight Bloom" by Seb, we thought it to be an obvious fit for our Fruits Du Bloom sku. 

This coffee was produced using anaerobic fermentation on MOSTLY ripe cherries (5% semi ripe) & a LONG fermentation time of 200HOURS! We won't get into the nitty gritty but properly fermenting cherries for 200hrs without incurring mold & other negative impacting bacteria is SO HARD & requires meticulous monitoring.
